The Air France Wine and Dine Experience presented by American Express This year, for its 9th edition, the MONTREAL HIGH LIGHTS Festival is pleased to welcome featured city Toronto and featured country Chile. We are also proud to host Coup de chapeau au 400e anniversaire de la ville de Québec as part of the opening festivities for the Air France Wine and Dine Experience presented by American Express. The event will feature five of Quebec City’s most acclaimed chefs as they concoct a six-course meal packed with flavour!

Since its inception in 2000, the Festival and its Finest Tables partners have hosted 213 chefs, wine producers and speakers from five continents. This year, the honorary presidency was bestowed upon Toronto’s Susur Lee (owner of restaurants Susur and Lee), no doubt the Queen City chef who has garnered the most local and international attention. Joining him is a contingent of 14 seasoned Toronto chefs, each thoroughly representative of our Ontario neighbours’ culinary evolution.

What’s more, festivalgoers will discover modern Chilean cuisine executed by six highly praised chefs who have honed their craft under famous European and American chefs, and will meet a dozen producers from some of Chile’s finest wineries.

On Saturday, February 23 and Sunday, February 24, Quebec City producers will make an appearance at the Jean-Talon Market, displaying their wares for your pleasure. Also on the menu: Demonstrations, conferences and workshops to kick your culinary knowledge up a notch.

Susur Lee

One might suspect that internationally acclaimed Chef Susur Lee was born with a spoon in his mouth— but that would be a tasting spoon, not a silver one. From his inauspicious beginnings as a 15-year-old apprentice at Hong Kong’s swell-egant hotels, to his current Atlas’s stride atop the fickle universe of celebrity chef-dom, Susur Lee has never deviated from a consuming passion: to explore beyond the horizons of received culinary knowledge, and to create unique, sublime compositions for the palate that blend textures and flavours in sensuous harmony.

Juxtaposing the complex food traditions of China with the classical techniques of French cuisine, Chef Lee improvises a daring and original aesthetic.
